This recipe is so easy, it’s not so much a recipe as a how-to. These airy crisps can be made in less than 15 minutes, and if you are like me, you usually have a block of Parmesan in the fridge. So what I’m saying here, is that this is the PERFECT last minute, emergency nosh recipe. Neighbor dropping by for drinks? Forgot to make something for the office gathering? Homemade Parmesan Crisps are quick and easy to make. The perfect emergency party snack!
- 1 wedge aged Parmesan cheese
Preheat the oven to 400°F (about 200°C). Line a baking sheet with parchment paper or a silicone baking mat. (Do not attempt without.)
Grate the Parmesan cheese finely, then drop tablespoonfuls on the lined baking sheet, leaving space between each. Spread the mounds into thin rounds.
Bake in the oven for about 10 minutes, until the cheese is melted and bubbly and slightly browned.
Remove from the oven, let cool, then carefully remove from the pan with a thin spatula.
These crisps also make a great salad topping. Simply break up and sprinkle over salad or grilled vegetables. Store in an airtight container in a cool, dark place and they will last for a week.
