Dairy and Sugar-Free Creamer
I am a coffee ADDICT. Every morning I have to have my cup of seriously strong, European style coffee. If I skip it, a raging headache is sure to appear by 2 PM. When I went on the Whole30 I was so happy that they weren’t going to mess with my caffeine habit, except for the fact that you could not have any sugar or dairy. For a week or so, I tried to go with black coffee, but eventually, I craved a little creamer of some sort. Plain old coconut milk took the edge off and added a little creamy sweetness to my cuppa, but I knew I could do better.
My creamer recipe is based on coconut milk. I decided to add a little extra creaminess by incorporating an egg. (If this freaks you out, feel free to omit it, but it does help the mixture to stay creamy and emulsified.) I also added a few dates and some ground cinnamon for a hint of natural sweetness. This creamer is paleo friendly and a great addition to a natural, plant based diet.
Homemade Sugar and Dairy Free Creamer
Dairy and refined sugar-free, this creamer will enhance your coffee while maintaining your healthy lifestyle.
- 8 pitted dates
- 1/4 cup hot water
- 1 can coconut milk
- 1 egg
- 1/4 tsp cinnamon
In the cup attachment of a smoothie blender, soak the dates in the hot water for 10 minutes, until softened and cooled somewhat. (Never blend very hot liquids- explosion risk.) Add a splash of the coconut milk to the mixture. Place the top on the smoothie blender and pulse the dates until smooth. Pour through a fine sieve into a container and strain out any remaining pulp. Return the mixture to the blender cup, add the remaining coconut milk, the egg and cinnamon and blend until well combined. Pour into a storage container. The mixture can be kept refrigerated for up to a week.

Some hardcore Whole30 followers may argue that using dates to sweeten your creamer is SWYPO (google it if you don’t’ know the term). For me, if it does not contain sweetener and keeps me from going off the wagon and abandoning the plan, it can’t be that bad.
