A while ago I did an article for Shanghai Family Magazine on how to make your own homemade blueberry ice cream. I am a total ice cream addict, especially on those warm summer nights on the deck or during a Netflix binge. Heck, I will use pretty much any excuse to dish up a bowl. Here in New Jersey, blueberries are in season. What better way to enjoy the bounty of summer, than with a yummy dessert! Without further ado, I give you my recipe for blueberry ice cream, no special equipment needed.
Homemade Blueberry Ice Cream
Cool off with this delicious homemade blueberry ice cream- no ice cream machine needed!
- 3 cups fresh blueberries
- 2 cups sugar
- 2 cups milk
- 2 cups whipping cream
- 4 egg yolks
- 1 Tbsp vanilla
- 1/4 tsp salt
Rinse berries thoroughly and pick over, removing any leaves or stems. Prepare eggs by separating and setting aside the yolks in a bowl, ready to use. In a large saucepan, combine milk, sugar and salt. Heat until sugar is completely dissolved and steam begins to rise from the pan, stirring frequently.
Drizzle about 1 cup of the milk mixture into the eggs slowly, while stirring to bring the eggs up to the temperature of the milk. Pour the egg mixture back into the larger pot of milk. Continue to cook for five minutes on low heat, until mixture begins to thicken slightly.
Add berries to the pot and use a stick blender to purée them into the milk mixture. You can leave the mixture as chunky or finely puréed as you like. Straining the mixture is another option for even smoother results. Finally, stir in the vanilla and heavy cream.
Pour ice cream mixture into a container and place in the freezer. Every half hour, take the mixture out of the freezer and stir vigorously until any frozen lumps are well incorporated and the ice cream is smooth. This step will make the ice crystal formation uniform and keep the end result silkier and softer. Return to freezer. Do this three more times. You will see that each time, the ice cream will be more set.
Allow the ice cream to sit in the freezer overnight for best results. Scoop and serve with your favorite toppings.
If you have an ice cream maker, the freezing process can be made more convenient by processing the mixture according to manufacturer instructions.
